Yogurt bark



Sometimes after a busy week, I'll admit, I dread the weekend. I can already feel you judging me! But it's not because I don't want to spend time with my family - of course I want to play with my son and cuddle with the dog! It's mostly because I selfishly want just 1 day to hangout in my pjs, watch tv all day and maybe take a looooong shower. It's difficult when you just don't have the energy after at 60 hour work week to keep up with a toddler and line up educational and fun activities to keep them preoccupied. AND, dare I say it...I mostly just want to SLEEP THE FUCK IN!



But, unfortunately momming doesn't take that shit into consideration. So for those days that you're counting the minutes until nap time, or don't have any activities planned, yogurt bark is the perfect, easy recipe to keep your little(s) preoccupied for a while. And, if your kid is anything like mine, it doubles as a snack - I had two stations set up, one for me and one for O because he kept eating his along the way (as you can see, below) and it never made it to the freezing stage.











But guys! Seriously! This is sooooo easy. I stripped the little guy down to his diaper because he likes to get messy. You can use whatever combination of things you want - fresh or frozen fruits, seeds, nuts, dried fruits, shredded coconut, mix in honey for sweetness, make it an indulgence with chocolate, make it fancy with a compote swirl through the yogurt. The opportunities are endless! Quick and easy recipe below.

For about a 5x5 square of bark:
1/2 cup yogurt - I use 10% full fat
1/2 cup toppings of choice - I used frozen cherries, blackberries

Method

1. Line a small sheet pan, freezer-safe plate/Tupperware, or piece of sturdy cardboard (a hard surface small enough to fit into the freezer) with parchment paper.

2. Spread the yogurt onto the parchment paper so that it's about 4-5mm thick. You want it thick enough so that the fruit sticks and it's not too thin and brittle after freezing.

3. Add your toppings.

4. Freeze! For a small piece like I did, it only took about an hour. It really depends on the size.

5. Once frozen, remove from parchment, cut it up and enjoy!
