Turkey & apple breakfast patties
Over the weekend I took a well-deserved few hours to myself. Usually we are out of the house keeping O occupied with soccer or play dates. But today I said "fuck it" and we stayed home all day long, with the exception of a quick trip to the grocery store to pick up ingredients for these turkey and apple breakfast patties.
I first made these patties when my husband and I were strictly paleo - before O came along. In fact, instead of eating them as breakfast patties, we often ate them as turkey sliders with a lettuce bun, because these little suckers are super versatile. And if your grocery store doesn't have ground turkey, you can just as easily use ground chicken. And of course you can add whatever spices you want (sometimes I do cumin or a curry), but I've kept it quite simple in the recipe below.

The great thing about these is that you can freeze them up and serve them for breakfast. Or if you're having guests over for brunch (like I do for Christmas and Easter), these go great with some fried eggs and sweet potato hash. Just keep 'em in the freezer and when you want to serve, bake them in the oven at 350F for about 15 mins. Your guests will be mind blown.
Ingredients
1 tbs coconut oil, plus more for frying
1 small sweet onion, diced small
1 small apple, diced small (I used gala)
1 glove garlic, minced
1lb ground turkey or chicken
1 tbsp fresh thyme, minced
1 tsp fresh sage, minced
pinch of nutmeg
salt and fresh cracked ground pepper to taste
1/2 tbsp apple cider vinegar
Method
1. Heat oil in a large skillet or cast iron pan over medium heat. Add your diced onion and apple, and cook, stirring occasionally, until onions are soft and translucent (approx. 5 minutes). Stir in your minced garlic and cook for another minute. Remove the apple/onion mixture and set aside to cool (seriously...let this stuff cool or when you add it to the ground turkey it's going to start cooking right in your mixing bowl - you've been warned).
2. In a large mixing bowl, take your cooled apple/onion mixture and add your ground turkey, thyme, sage, nutmeg salt, pepper and apple cider vinegar. Mix together until incorporated, but do not over mix. I use my hands to make sure I'm not over mixing, and if you over mix, they will be dense and heavy. Again, you've been warned.
3. Scoop the turkey mixture in a couple of tablespoons and roll it into 1 1/2 to 2 inch balls. I roll mine on the smaller side, because I like them two-bite sized. Then, flatten the balls gently to form a patty.
4. Heat your skillet and add coconut oil to cook. Add your patties around the skillet and cook until they are golden brown and cooked on the inside - about 3 minutes on each side depending on the size of your patties.
